Trevor R. Brunet feels most at home in the kitchen, and as of July 23, he will be working in more than one place to call home.
The current chef and owner of Simplicity Cafe in the Dobisky Visitors Center will open Simplicity at Stone Fence at the Stone Fence Resort, 7191 Route 37.
Its hard to put a name on the type of cuisine the Culinary Institute of America graduates new endeavor will offer, he said, as it pulls influences from his travels domestically and abroad to add flair to American classics.
Classical fusion, he said. It will be a touch of fusion, but not over the top.
His menu will include starters like a platter of crostini mounted by toppings ranging from traditional olive tapenade to faux caviar made with eggplant. In colder weather, soups will have a regular place on the menu, he said.
An array of salads, traditional fare like pork chops, ribeye steaks, handmade pastas and risotto, and eggplant Parmesan, and unique offerings like falafel, shrimp kebob and Alaskan king salmon round out dining selections.
It will be a unique experience, he said. Unique, but comfortable and familiar.
The menu will also be affordable in most cases, he said, unless he is offering a hard-to-source ingredient that requires a higher price.
The fare and atmosphere during the week will be more casual, Mr. Brunet said, and dining have a more upscale, special-occasion feel on weekends.
I want it to be a whole different experience on weekends, he said.
Mr. Brunet plans to serve breakfast, lunch and dinner six days a week, and breakfast on Mondays.
He is still awaiting approval of a liquor license from the state Liquor Authority, but will outsource bar service for catering events in the meantime, he said.
Simplicity at Stone Fence will not keep him from also running the Simplicity Cafe, he said, although the cafe will have a limited menu while he works to hit a stride with his second restaurant.
I just want to keep growing the business and keep expanding, Mr. Brunet said. I have another location in my sights, but Im not going to say anything about it until just before Im ready to open.
Mr. Brunet is a 2004 graduate of Morristown Central School and a 2006 graduate of the Culinary Institute of America, Hyde Park.
His work outside the north country has primarily been in country clubs, he said, and he was drawn back to the north country a few years ago.
I missed everything I grew up having and had lost track of while I was away, he said. I missed my family.
He tried his hand at a few occupations when he moved back, but was inevitably drawn back to the kitchen. Mr. Brunets father, William F. Brunet, owned and operated the Lakeside Restaurant on Black Lake for many years.
You could say its in my DNA, he said. Its what I knew my entire life. Plus, there is a lot of privately owned business in the family. I knew I wanted to start my own business.
