Ham, eggs and chocolate are the foods most closely associated with Easter. The following recipe for Easter brunch falls in line nicely with those holiday themes.



OVERNIGHT BREAKFAST CASSEROLE FOR EASTER BRUNCH

4 cups frozen hashbrown potatoes

1 lb. cooked, crumbled and drained pork sausage

12 eggs

2 1/4 cups milk

4 cups shredded cheddar cheese

Garlic powder, salt and pepper to taste



Lightly butter the sides and bottom of a 9 x 13 pan. Place the frozen hashbrowns in a layer on the bottom of the pan. Place cooked sausage on top of the potatoes and sprinkle all of the cheese on top. Beat eggs, milk and seasoning together, and pour on top. Cover the casserole and refrigerate overnight.

Bake at 350 degrees for about 50 minutes. Let set a few minutes before cutting and serving.
